DENVER, CO — December 17, 2025 – The American Cheese Society (ACS) has announced that its 2027 Annual Conference will take place in Madison, Wisconsin, Tuesday–Friday, July 27–30, 2027, marking a return to one of the organization’s most historically significant host cities. 

The conference was last held in Madison in 2013, when the city hosted ACS’s 30th anniversary. Fourteen years later, ACS returns to a destination deeply connected to American cheese through agriculture, craft, and innovation. 

“Returning to Madison feels both celebratory and intentional,” said Tara Holmes, Executive Director of the American Cheese Society. “Wisconsin is synonymous with American cheese, and Madison’s blend of tradition, innovation, and community mirrors the spirit of ACS. We’re excited to bring our members back to a city that understands craft, champions makers, and welcomes meaningful dialogue about the future of cheese.” 

The ACS Annual Conference is the organization’s flagship event, bringing together cheesemakers, retailers, distributors, educators, and industry leaders from across the country for education, networking, and community-building. 

Destination Madison welcomed the announcement, citing strong alignment between the city and the organization’s mission.
